Our Evolv Collection bar teams went head-to-head at Campari House, each shaking up their own creative twist on a Negroni. Four creations stole the spotlight and are now poured exclusively on this menu throughout September. From bold classics for the Negroni lovers to lighter, playful twists for those who like to experiment, each serve celebrates the creativity of our teams. And because one week just isn’t enough, we’ve partnered with Campari to stretch Negroni Week (22–28 September) into a month-long celebration across our restaurants.

A cocktail with rich history & global appeal
The Negroni's origin story is as captivating as the cocktail itself. It was created in Florence, Italy, in 1919, when Count Camillo Negroni asked his bartender, Fosco Scarselli, to strengthen his favorite cocktail, the Americano, by replacing the soda water with gin. This simple yet bold substitution gave birth to the Negroni, a perfectly balanced blend of gin, Campari, and sweet vermouth, garnished with an orange slice. The Negroni quickly became a staple in Italian cafes and bars, revered for its strikingly bitter yet refreshing taste.
